Emile Gaston WaldteufelChef Emile Waldteufel's Alsatian and Lyonaise heritage is rich in both restaurant experience and the arts. His great grandfather, Pierre Gaston Domergue from Lyon, operated the well known restaurant Domergue's in Sausalito during the 1890's and early 1900's, serving the many San Franciscans who journeyed across the bay on hunting and fishing excursions in the Marin headlands. Domergue's was a fine dining spot in Marin county specializing in fresh wild game prepared in the classic French style. |

Emile began his culinary career by graduating from the San Francisco City
College Hotel and Restaurant program in 1966. He has worked at such Bay
Area restaurants as Ondines, La Mirabelle, L'Etoile, and Fleur de Lys. He
also served his time abroad at L'Hotel Maxime in Auxerre, and La Palinurus
in Sens, France. Prior to opening Remillard's in Larkspur in 1989, Emile
served as executive chef for seven years at San Francisco's Le Castel.
Following Remillard's, Emile worked at Sonapa Bistro in Mill Valley for two
years. During his years at Le Castel, Remillard's, and Sonapa's, Emile's
cuisine earned the restaurants many fine reviews, as well as earning
several Holiday Magazine Awards, Cartier's Award for Excellence, and San
Francisco Focus Magazine Award for Best French Restaurant and Best Service.
Emile is as much known for his sauces and souffles as he is for his amazing endurance in the kitchen under fire. He bicycled competitively throughout France and Europe, and also represented the United States in the 1972 Olympic Games in Munich. He presently resides in Rohnert Park with his wife Martha, and his two daughters, Stephanie and Kathleen. |
